Friis Holm

friis holmAt the Chocolate Unwrapped 2011 event held at Vinopolis, I came across an interesting British/Danish chocolate company called Chocolate and Love.  As well as producing a superb range of chocolates, Chocolate and Love also run tutored chocolate tasting events.  I spoke to one of the company’s co-founders, Richard O’Connor, who invited me to attend one of these events.

The event was a really enjoyable and educational experience.  I learnt how to taste and appreciate the complex flavour profiles and subtle nuances of chocolate made by skilled chocolate makers using high quality, fine flavoured cacao beans from different regions of the world.  These kinds of chocolate are a gourmet food that should be appreciated akin to a fine wine or olive oil.

One of the highlights of the evening was guest speaker, Mikkel Friis-Holm.  Mikkel is a Danish chef and chocolate maker who produces fantastic chocolate using exclusive cacao beans that are grown in Honduras and Nicaragua, under his brand name Friis Holm.  He has a real passion for his art which comes across in every morsel of his chocolate that you consume.  His dark milk chocolate is truly exquisite and is one of the finest chocolates that I have ever had the pleasure of tasting.
